You can also replace oil or shortening in a recipe with flax (substitute ground flax at a 3:1 ratio for best results). Using ground flax as an egg replacer in recipes for muffins, cakes, cookies and pancakes is easy: mix 1 tablespoon of flax seed meal and 3 tablespoons of liquid to create a flax gel that can replace each egg called for in the recipe.
