These ancient grains were originally a staple food of the Incas, called chisiya mama, or “mother grain.” Providing essential amino acids—and therefore a source of high-quality protein—these tiny quinoa seeds have become a huge food trend in restaurants and homes around the world, particularly for vegetarian and vegan eaters. Quinoa also contains omega-3 fatty acids in the form of alpha-linolenic acid, which many believe offers multiple health benefits.
Red quinoa is native to South America. It’s actually a gluten free seed, but used in cooking like a whole grain. Red quinoa is delicious on its own and in pilafs, soups and salads; the beautiful color elevates even the simplest dish. You can also eat cooked quinoa as a hot cereal as an alternative to oatmeal—add your favorite milk, sweeteners and toppings for a protein-rich breakfast.
